How you start off your morning can really make or break your day. I think any morning that begins with fluffy, hot off the griddle crispy-edge pancakes is bound to be a good one. My favorite meal of the day has got to be breakfast – I just adore the sweet and savory combo 🙂
This is a simple, classic no fail pancake recipe that renders tall and fluffy pancakes! These will be perfect for Valentine’s Day breakfast tomorrow ♥
In a large bowl, combine milk & vinegar. Set aside for 5 minutes to "sour".
After 5 minutes, whisk egg yolk and butter into soured milk. Now add in dry ingredients. Mix well - some small lumps are ok.
In a separate bowl, beat egg white until soft peaks start to form. Pour into batter mixture and fold.
Melt butter in a skillet over medium heat & pour in 1/4 cup of batter. Flip pancake when bubbles start to appear on the surface. Cook until golden brown on the other side.
Top off pancakes with figs and maple syrup.
****NOTE: Overbeating the egg white will make pancakes very dry tasting. If stiff peaks form - discard & start over. Sprinkling sugar over figs is optional - I do it to all my fruits because I like the crunchy texture.
