I am such a huge foodie that I want my first blog post to be of my all time favorite dish! My fiancé surprised me with this delicious dish on one of the days where I had to work late. I’ve made this dish for friends & family many times and each time, it’s gone in minutes! This dish is ridiculously simple and easy to make. With the holidays around the corner, you should make a big batch and impress your loved ones.
You may omit the shrimp or substitute it with your choice of protein
Aglio e Olio (“spaghetti with garlic and oil”) is an Italian pasta dish made by sauteeing garlic in olive oil, sometimes with red chili flakes and finely chopped parsley, and tossed with spaghetti noodles.
Lemon Pasta with Olive Oil & Garlic (Aglio E Olio)
1/2 cup olive oil
2 tbsp salt (for boiling pasta)
1 tsp salt
1 tomato (seeded & diced)
1 head of garlic (thinly sliced)
1/4 cup parsley (chopped)
1/2 tsp dried red pepper flakes
Zest of 1 lemon
1 lb spaghetti pasta
15 shrimps (peeled & butterflied)
Grated parmesan to serve
Bring a large pot of water to a boil & add 2 tbsp salt. Throw in pasta & cook until al dente.
While pasta cooks - combine olive oil, garlic, red pepper flakes & 1 tsp salt in a pan over very low heat. Stir occasionally until garlic is soft & lightly golden. (about 8 mins).
Drain pasta, reserving 1/4 cup of cooking water.
Add tomatoes, parsley, lemon zest, pasta & cooking water to garlic mixture. Toss well & transfer pasta to a serving bowl.
Sear shrimps over high heat with whatever oil is left in the pasta pan. Add more oil if needed. (Small-medium shrimps take about 1 1/2 - 2 mins on each side)
Serve warm with freshly grated parmesan cheese. Buon appetito!!
